Creamy Butternut Squash Soup 🥣



This velvety soup is perfect for chilly days, combining sweet squash with savoury herbs.


Ingredients:

  • 1 medium butternut squash, peeled and cubed

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 4 cups vegetable broth

  • 1 tsp dried thyme

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ cup heavy cream or coconut cream

  • Olive oil for roasting

  • Optional: Garlic croutons and parsley for garnish


Steps:

  1. Roast the squash: Preheat the oven to 400°F (200°C). Toss the squash cubes with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 25-30 minutes until tender and slightly caramelized.

  2. Sauté the aromatics: In a large pot, heat 1 tbsp of olive oil over medium heat. Add the onions and garlic, and sauté until softened (about 5 minutes).

  3. Add the squash and broth: Transfer the roasted squash to the pot and pour in the vegetable broth. Add thyme, salt, and pepper.

  4. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes.

  5. Blend: Use an immersion blender or transfer the soup to a blender to puree until smooth.

  6. Finish with cream: Stir in the heavy cream or coconut cream, then adjust seasoning if needed.

  7. Serve: Ladle into bowls and garnish with croutons and parsley.
