Pumpkin Spice Pancakes with Maple Syrup Drizzle 🥞

These pancakes are fluffy, fragrant, and bursting with fall flavors!

Ingredients:

  • 1 ½ cups all-purpose flour

  • 1 tbsp baking powder

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ½ tsp ground ginger

  • ÂĽ tsp salt

  • 1 cup pumpkin puree

  • 1 cup milk

  • 2 eggs

  • 2 tbsp melted butter

  • 2 tbsp brown sugar

  • Maple syrup and chopped pecans for topping

Steps:

  1. Mix the dry ingredients: In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt.

  2. Prepare the wet ingredients: In a separate bowl, whisk the pumpkin puree, milk, eggs, melted butter, and brown sugar until smooth.

  3. Combine the mixtures: Gradually stir the wet ingredients into the dry ingredients until just combined (don’t overmix).

  4. Cook the pancakes: Heat a non-stick pan over medium heat and lightly grease it with butter or oil. Pour ¼ cup of batter onto the pan and cook for 2-3 minutes until bubbles form on the surface. Flip and cook the other side for 1-2 minutes.

  5. Serve: Stack the pancakes and drizzle with maple syrup. Top with chopped pecans for extra crunch.
